The cheese thread got me going on this and I realized I should probably add a description.

An Uitsmijter is typically a breakfast or lunch dish, though I believe it originated as late-night bar far.  Evidence for this is that Uitsmijter means 'bouncer' in Dutch.

There's lots of variations for it, but the basic version is two pieces of buttered toast, topped with ham and cheese and topped off with two or three fried eggs, sunnyside up.



Quick and simple, but very flavorful.

There have to be 1001 variations on this, from a Croque Madame to a McDonald's Egg McMuffin -- and all pretty good, especially after a late night out or as the last item to come out of the kitchen after service!

I like an "uitsmijter" every now and then for lunch, Pitrow. Very much Hollandish!

This morning the little munchkin decided to wake up absurdly early (4:45 instead of her usual 8:00!). Stumbling around the kitchen, I couldn't come up with anything for breakfast by the time we all got hungry but then remembered this post! So I used what we had on hand to come up with my own version.

Sourdough with raw sharp cheddar broiled on top, prosciutto and the sunny side up egg. It was great!

i really like the simplicity of this dish, and its versatility. on a lot of saturday mornings we like to do something quite similar, but i really like this presentation and will try it. great pictures, mike and marissa!

I've made this a couple of times since seeing this thread. Simple, satisfying, hot meal, that's easy to be creative with.

I'd like to find a way to get some vegetables in there somehow... Ah, but why spoil it?Smile

The way we pronounce it in my family is similar to how the literal translation would be in English.... Out - Smiter (Emphasis on Out, and Smiter as in someone that would smite you). I have a feeling that were you in Holland the 'uit' part would be a little like Ooot.

I'm with ya on the veggie thing. Sometimes I think some sauteed onions and bell peppers would be good, but then I second guess it and don't want to make it overly complex, flavor-wise. Just a quick simple meal is all you need sometimes.
