The only way to reach Altnharrie Inn in Ullapool Highland, Scotland on the northwest coast is to catch the ferry in Ullapool. The ride was about 10 minutes back in the 1990s and the destination, globes and galaxies apart. The tiny 8 room bed and breakfast is a 1700s Drover´s Inn ( shepherd´s inn ) with a One Michelin Star and run by an Inverness Mr. Fred Brown since 1976.
 
The Norwegian Chef, Ms. Gunn Eriksen had come to Scotland with the intentions to start a business as a Ceramist. Here is her multi dimensional and artistic dish, called: Fresh Wild Ullapool Salmon in Champagne Sauce.
 
NOTE: Dry white wine, Cava or other Sparkling Wine may be used to sub the budget for a bottle of Champagne.  
 
 Wink highland salmon in sparkling wine for 4
 
Tongue champagne or sparkling wine sauce ...
 
2 cups fresh clam stock
1 small fennel bulb thinly sliced
1 bay leaf
3/4 cups dry white wine or champagne, extra brut cava or sparkling white wine
2 tblsps heavy cream
1 1/2 pounds wild fresh salmon: cut on diagonal and into 3/4 inch thick slices
7 tblsps unsalted butter
fresh chopped parsley
 
1. simmer the clam stock, fennel and bay leaf
2. salt and freshly ground black,rose and green pepper
3.. in heavy sauce pan, until the liquid is reduced to 1/4 cup about 15 minutes and mix and stir in the cream and combine well.
4. melt 1 tblsp of butter into sauté skillet and over medium heat add the salmon and cook 30 seconds to 1 minute per side for rare interior
5. bring wine to to simmer and whisk in the rest of the butter and of course, Drizzle the sauce on the salmon.
 
This is a special occasion dish, and quite lovely.

This would be gorgeous with fresh caught on the line rainbow trout ( salmon color interior ) !
