This popular and varied recipe hails from the Gruy√®re cheese region of  western Switzerland, where we had gone to a traditional Cheesemaker¬īs Dairy in the town and region of the same name, Gruy√®re with my younger daughter and her husband.
 
It is quite frequent to find talented food artisans of Italian origins who had immigrated to Switzerland throughout the country.
 
Here is a nice, simple, non fancy dish ...
 
Veal Scaloppine & gruyère cheese ... ( This can be prepared with chicken scallopine too ... )
 
2 pounds veal scaloppine
2 1/2 tblsps. Evoo
2 1/2 tblps. Marsala Wine or Dry White Wine ( or non sweetened Grape Must or a drizzle of fresh Lemon Juice )
12 slices Gruy√®re Swiss Cheese ( or sub: Reggiano Parmesano  - 5 tblsps. )
flour
3 tblsps butter
salt and freshly ground black pepper
12 slices Parma style Ham
 
1) lightly flatten the veal scaloppine and dredge the pieces in flour
2) heat the Evoo and butter in a large skillet
3) sauté the scaloppine until tender and golden brown on both sides
4) transfer the meat to a baking pan and season with salt and freshly ground pepper
5) preheat oven to 425 farenheit degrees and add the wine to the olive oil remaining in the skillet and cook for 2 mins. or so until slightly reduced and stirring the crusty bits from the bottom of the skillet, with a wooden spoon
6) pour this sauce mixture the scaloppine and place a slice of ham and one slice of cheese or grated Parmesano and put into the oven, just long enough to melt the cheese.
 
SERVE WITH CRUSTY BREAD AND A GLASS OF LAMBRUSCO OR PINOT NOIR CAVA ...
 
*** to sub wine:  employ some fresh lemon juice or non sweetened grape juice Must.
