While I was out of town working, my wife made a zucchini lasagna. And it was devoured by the children.
First, you start with a zucchini straight out of the ole garden (bumper crop this year, had one that was long enough from my shoulder to my wrist. The pic doesn't do it justice. ![]() And the other ingredients, cottage cheese, eggs, mozarella, and feta cheese.... ![]() Mix the feta, cottage cheese, and the mozzarella together... ![]() Slice the zucchini and place in a baking dish... ![]() Top with the cheese mix, then cover with mozzarella, bake at 350 until it smells done (about 45 minutes, it's hard to communicate how long when you smell when it's done). And plate... ![]() ![]() And yum... Aaron |

It was quite tasty, and yes, I believe the wife put spinach in it as well. All in all, an excellent dish.
