Zabaglione with Vin Santo / Marsala

Vin Santo is a sweet Italian dessert wine as in Marsala from Sicily.  This is quite an elegant dessert and quite simple to prepare however, with a keen eye ..  ClapClapClap

6 Servings ..

5 egg yolks
5 tblsps of sugar 
80 Ml. Vin Santo or Marsala 
1) Using a portable stand up mixer or portable electric mixer or a good quality whisk, beat the yolks and sugar in a large metal bowl until thick and pale in color about 3 minutes.

2)   Set the bowl over a saucepan of simmering water.  Gradually, whisk in the wine. 

3)  Continue  whisking until foamy and tripled in volume, approx  4 minutes ..

4)  Spoon the warm Zabaglione into goblets  or Martini glasses and serve with biscotti or fresh strawberries.
