Haven't been here in a little bit, seem to just get to busy but here is what I got for tonights dinner Did a quick couple chicken breast tonight laced with bacon. I used some Yardbird rub and then glazed with a chipotle grilled mango sauce while they were on the grill. These are always a favorite of mine when it comes to chicken. No real fancy plating pics it was only me at home tonight. Here are the pics and thanks for lookin Ready for the grill
Just off before slicing down the middle
and dinner is served

Did you make the glaze Jerod? It sure looks good.
Nice job man...couldn't cook much here as we were under tornado warnings for most of the evening. Pretty nasty night in the northeast. If you have a recipe for the glaze I'd love to see it. |

Though I have never seen Jerod on the Fotw Forum, I do wish to state, that this recipe looks divino!
Love the bacon laced chicken idea with a mango glaze, which I would prepare homemade, however.
This is definitely on my list, as my significant other selected this one !

Happy Holidays.
Yes, this dish does look really delicious. I believe a red bell and a pinch of red chili pepper or smoked paprika with evoo, in a glaze would be lovely too. Pears can be lovely too, to provide the sweet n´ sour achieved by the mango and subbed by the pears. Perhaps pineapple & cilantro can be quite lovely too if available in Ohio.

I used some red pepper pinapple stuff I found in a specialty shop, and added a little heat with some fresh jalepeno. Next time I'd like to make something with pears or mango if I can find it. I think we did have mangos briefly at the grocery store last summer. There's a homemade ice cream and fudge shop nearby that makes bacon-maple fudge. It is fantastic! They sell out very quickly. One free sample and I was hooked. Amazing how bacon blends with so many flavors.

We have Canary Island Mangos all year so it is on list when we get back ...
Visiting in Switzerland our younger daughter and the older arrived too. A white Christmas too. We see snow once a year, in Switzerland.
Madrid is so polluted is rarely rains or snows; though temperatures run about 32 farenheit to 55 farenheit in peak of day; 12pm to dark in winter; zero centigrade up to 20 - 23 degrees centigrade and normally even if cold, it is very dry and very sunny.

Forgot to mention, that In the Mexico Section: I posted a roast pork with orange, and thus, this chicken recipe would work marvelously with oranges or tangerine glaze too !
It is called ROAST PORK CON RON ( in Spanish, Ron is RUM ! )
