Serves 4 (1/2 syn per portion on Extra Easy)

2 cups uncooked Basmati Rice
2 oz shimeji (or Chinese) mushrooms
4 fresh Shiitake mushrooms
4 oz Enoki mushrooms
2 tbsp Soy Sauce
1 tbsp Sake
½ tbsp Mirin or Sweet Sherry
Salt to taste

Rinse the rice well and drain.
Separate the stalks of the shimeji and Shiitake mushrooms. Remove the root base of the Enoki mushrooms and chop. Slice the Shiitake mushrooms thinly. Put rice in pan (or rice cooker) add the soy sauce, miring and sake, with a little salt. Add enough water to cover + ½ inch above the surface of the rice and add the mushrooms on top. Cover with a tight fitting lid and cook till all the water has been absorbed (or until the rice cooker clicks off).

Gently fold in the mushrooms to the cooked rice. Serve with Teriyaki Chicken Thighs

Any mushrooms (including dried ones) could substitute.
