I got home from work last night and was treated to a real prize from my friend Dave (Hoser).
In a discussion about salt cod on the Iberian forum, I mentioned that while we do have frozen, skinless cod fillets available here, thanks to Wal-Mart, I have never seen salt cod, except possibly in the bigger towns which are, at least, about 130 miles away (Great Falls) or farther (Billings, Helena, Missoula etc.).
Dave, who not only lives near the coast in New England, but also lives near a substantial Portuguese population, was kind enough to send some, so that I may try Bacalao al Pil Pil, which is a quintessential Basque dish that you all will hear more about, hopefully in time for Lent.
I will post a link here when I complete the pictorial, and anyone interested can take a look at it then; for now, I want to thank Dave for his thoughtfulness and generosity - I think this is just what the doctor ordered!
